I’m excited to watch the Super Bowl this Sunday. My team, the Seattle Seahawks, didn’t make it this year. Darn it! Nonetheless, I am very excited to watch the game, all the commercials and the half-time show. I’m also hoping to see my Dad and Stepmom on TV. Yep, they are going to be at the Super Bowl! They won a raffle for an all-expense paid trip to the Super Bowl. Can you believe it? How cool is that! I’m so envious and very happy for them!

Other than being at the actual game, what better way to watch the Super Bowl, than with friends, family bowl of chili? I made some Awesome White Chicken Chili last week and will definitely be making it again on game day. I love, love this chili AND it can be made in a slow-cooker! Thanks goodness for slow-cookers.

My Awesome White Chicken Chili is so easy to make. To help make the chili a little thicker, add one can of drained white beans into a small bowl and smash with a fork before adding to the slow cooker.

Smashing White Beans for Chili

Add chicken, white beans and spices with a little bit of chicken broth to a slow cooker. If you want a spicier chili add more jalapenos, if you want a less spicy chili only add one jalapeno. Let simmer on high for 3 ½ to 4 hours or on low for 6 to 7 hours.

After the chicken is done, there should be no pink meat, scoop it out of the slow-cooker with a slotted spoon and shred it with two forks. Add the shredded chicken back into the slow-cooker, give the chili a good stir and let it cook for another half an hour. When time is up, serve the chili with some Monterey Jack cheese and sour cream.

White Chicken Chili

Awesome White Chicken Chili

Ingredients

  • 1 ½ pounds skinless, boneless, chicken tenders
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 2 4 ounce cans diced green chilis
  • 2 teaspoons ground cumin
  • 3 cans of white beans drained
  • 1/2 cup chicken broth
  • 1 jalapeno pepper diced finely
  • 1 cup shredded Monterey Jack cheese for serving
  • Sour cream for serving

Instructions

  • Add all the ingredients into large slow cooker. Cook on low for 7 hours or high for about 3 ½ hours. Take out the chicken and shred. Add the shredded chicken back to the slow cooker and let cook for another 30 minutes.
  • When serving, add chili to a bowl and top with cheese and sour cream. Enjoy!
