If you have left over spaghetti noodles, you’ve got to make this Spaghetti Pie with Italian Sausage and Spicy Sauce!

I love this recipe. It’s such delicious comfort food and it’s easy to make.

I know, I know… carbs! Everyone deserves a cheat day! This is so worth it. I mean, come on, just look at this gloriousness! I’m pretty sure that’s a real word?

By the way, this smelled absolutely amazing when I was cooking it. Oh, my goodness, when I was cooking the sausage, onions and garlic, I could barely stand it! The smell was making me so hungry. Of course, I had to try a little bit of sausage mixture before adding in the rest of the ingredients. YUM!!

This would be great for a family dinner (or a cheat day if your carb conscious😉). If you have kids who love spaghetti, they’ll think this is so cool. You may not have any leftovers!

I love spicy spaghetti sauce and prefer Italian sausage over ground beef. I think it adds more flavor to the sauce. I used medium (hot) Italian sausage. I also added some red pepper flakes. If you aren’t a fan of spicy food, us a mild Italian sausage and don’t add the red pepper flakes, or just add less than I did. I also added black olives, which I know some of you out there may not care for. I love olives, but I would consider these optional for the sauce.

Once I cooked up the sausage sauce and added it to the cooled/cold noodles, I whisked some eggs and added it to the mixture. Eggs help bind the noodles together to help them keep their pie form. They does not affect the taste of the dish at all.

I used a spring form pan for this recipe. It makes the removal of the pie easier, so everyone can admire this pie and all it’s noodle-y awesomeness. A cake pan would work well too. I wouldn’t use a pie pan even though the name of this recipe includes the word “pie”. A pie pan is too shallow. You’d have the noodles, etc. falling out over the edge of the pan. Not good.

After adding the noodle mixture into my greased spring form pan, I added dollops of ricotta cheese on top. Yep, I sure did.

I reserved some of the meat sauce and added it on top of the ricotta cheese. Then I sprinkled shredded mozzarella cheese on top. Yum!

Spaghetti Pie with Italian Sausage and Spicy Sauce

Ingredients

  • 1 lb spaghetti noodles cooked and cooled
  • 2 tablespoons olive oil
  • 1 pound Italian sausage
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1/2 teaspoon dried crushed red pepper flakes
  • 1 28- ounce can crushed tomatoes
  • 1/2 cup pitted black olives coarsely chopped
  • 1/2 teaspoon salt more to taste if needed
  • 3 large eggs beaten
  • 1 cup of ricotta cheese
  • 1 cup mozzarella cheese shredded
  • ¼ cup parmesan cheese shredded
  • Cooking spray olive oil
  • 9 x 3 inch spring form or cake pan

Instructions

  • Heat oven to 350°F. Use cooking spray to grease pan and set aside.
  • If your spaghetti noodles are not cooked, cook them now according to package directions. When they are done cooking, strain them in a colander and rinse in cold water. You want to use cooled spaghetti noodles for this recipe.
  • Add olive oil to a large pan on medium heat. Add the sausage to the pan the cook until almost done. Most of the pink should be gone.
  • Add the onions to the pan and cook for 2 minutes. Cook until the onions have softened, and the sausage is completely done then add the garlic and red pepper flakes and cook for 30 seconds.
  • Add to the pan, the crushed tomatoes, black olives and salt to the pan. Mix everything together. Once the meat sauce starts to boil, reduce the heat to low and let the meat sauce simmer for 15 minutes.
  • Take the meat sauce off the heat. In a large bowl add the spaghetti noodles and about 2/3 of the meat sauce. You’ll want to reserve about a 1/3 of the meat sauce for topping the pie.
  • Beat 3 large eggs and add them to the meat sauce/noodle mixture. Stir very well until all the ingredients are incorporated.
  • Add the meat sauce/noodle mixture to the prepared spring form pan. Top with dollops of ricotta cheese. Over the top of the ricotta, add the remaining meat sauce. Then sprinkle the mozzarella and parmesan over the top.
  • Place the pan in the preheat oven and bake for 25 – 30 minutes. The edges of the cheese should be brown but not burnt. Take out of the oven when done. Let the pie settle for 5-10 minutes before removing from the spring form pan. Serve and enjoy!

Notes

Hint: If you have to cook the spaghetti, you can use the same pan to cook the sauce for less clean up. 😊
