My guy took me out to dinner recently at a Mexican restaurant. The waiter brought tortilla chips and a green dip that I thought was guacamole. I was thoroughly engaged in the conversation I was having with my boyfriend so I didn’t realize until after eating about 3 chips heavily laden with green dip that it wasn’t guacamole. Whatever it was, I loved it. Of course, I had to ask the waiter about the amazing green stuff, he mentioned it was their own edamame dip. Note to self; definitely recreate this dip at home!

So here I am a couple weeks later sharing with you my version called Tasty Edamame Dip. I doubt this will be my last time making a version of edamame dip because I love edamame. The big plus? Edamame is a great source of protein and antioxidants. Also, it’s low in calories (130 calories/cup) and it’s high in fiber. Enough about all this healthy stuff…. Edamame takes darn good!

This dip is very easy to make. You’ll need about 2 cups of shelled and cooked edamame. I found a 16-ounce bag (2 cups) of shelled edamame at the grocery store that I could just cook in a microwave for 7 minutes on high. The instructions on the bag said to cook for 5 minutes but if you cook the edamame a bit longer it creates a smoother consistency when pulsed in a food processor. I don’t always follow instructions… I know, I know… such a rebel!

After the edamame is cooked and has been cooled off, add it to a food processor with onion, cilantro, garlic, lime juice, salt and pepper.

Pulse until the mixture looks like little bits. I’m not sure how else to explain what “little bits” look like so I’ve included a picture.

Slowly pour the olive oil in while the food processor is running. You’ll notice the little bits are smoothing out. After you’ve pour in the olive oil in the food processor, scrape down the side of the bowl so all the little bits clinging to the side get mixed in as well. Run the food processor for another minute. Transfer this Tasty Edamame Dip to a dish for serving.

Tasty Edamame Dip

This Tasty Edamame Dip goes incredibly well with other veggies, pretzels, crackers or tortilla chips. Serve this at your next gathering or do what I do and make it just for yourself to enjoy!

Tasty Edamame Dip

Ingredients

  • 16- ounces shelled cooked, and cooled edamame
  • 1/4 cup onion chopped
  • 1/2 cup tightly packed fresh cilantro
  • 2 cloves garlic chopped
  • 1/4 cup freshly squeezed lime juice
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 5 tablespoons olive oil

Instructions

  • Add all the ingredients except the olive oil into the bowl of a food processor. Pulse until mixture looks like little bits (see pic above for reference).
  • While the food processor is running, slowly drizzle in the olive oil. Once all the olive oil is added, let the food processor run for another minute. The mixture should look smooth.
  • Serve with veggies, pretzels, crackers or tortilla chips. Enjoy!
