As 2017 is coming to an end, I would like to suggest a Pomegranate-Lime Champagne Cocktail to ring in the New Year.
I was a mixologist last night. I was concocting many different versions of pomegranate juice and champagne cocktails and serving them up to my boyfriend to get his input. It’s always good to have a second opinion why creating new recipes, especially cocktail recipes. It was a fun night. 😉
Sometimes I thought one of my concoctions was good and he wouldn’t like it much or vice versa. We couldn’t seem to agree. Definitely, none of the concoctions I was making were good enough to share with you. Maybe a pomegranate juice and champagne cocktail wasn’t meant to be.
I was searching through my liquor cabinet for something different and my eye spied a bottle of pomegranate liqueur. I had completely forgotten I had bought it but YAY! Maybe there was hope for a new pomegranate and champagne cocktail.
I poured some pomegranate liqueur and champagne together in a glass. It tasted good mixed together, but it fell a little short of what I was looking for which was an amazing can-I-please-have-another cocktail.
I added simple syrup and lime juice to the pomegranate liqueur and champagne mixture that I had just tasted. The simple syrup gave it that sweetness and the lime juice made it pleasingly tart. When I tasted what I just made I thought to myself “Wow! This is really good. I think I did it! I made an amazing can-I-please-have-another cocktail”
I didn’t want to scew the taste testing for my boyfriend, so I handed it to him and said, “What about this one?” He tasted it … and then tasted it again before exclaiming, “That is really good.”
YAY…I was patting myself on the back. My boyfriend and I agreed. When he was done with the first one, he asked for a second. Woot!

Pomegranate, Lime and Champagne Cocktail
Ingredients
- 1 ounce pomegranate liqueur
- ½ ounce simply syrup recipe below or store-bought
- 1 teaspoon lime juice (a little more lime juice can be added for more tartness)
- Brut champagne
Instructions
- Mix pomegranate liqueur, simple syrup and lime juice in a martini glass or champagne flute. Stir to mix ingredients. Add champagne until the glass if full. Stir gently to mix all ingredients. Sip and enjoy!
