TOE-MAY-TOE …TOE-MAH-TOE… I love them either way you say it. I was in my kitchen trying to duplicate a hamburger recipe that I will be posting soon and had to make oven roasted tomatoes for the recipe. O.M.G.! The Oven Roasted Tomatoes were so good, they deserve their own post. So here it is.

First let me just say, I had no idea that Oven Roasted Tomatoes could taste so good. I had to stop eating them off the pan when they were done so I would have enough left over for my hamburger recipe. I also love that they are so easy to make. I used Roma tomatoes for this recipe but I’m sure most tomatoes would work. Oh! I have an odd confession to make. I don’t like the core of even the tiniest tomato. I have always cut them out. I stopped cutting out the core of small cherry tomatoes because, frankly, it’s just such a pain. I do cut the core out of almost all other tomatoes and dislike seeing a portion of a core at a restaurant in my salad. There! I know it sounds very odd but it’s my thing. ? Is this anyone else’s thing or am I alone in this?

I cut each Roma tomato into 4 wedges and laid out each wedge onto an aluminum foil lined baking sheet. You don’t have to lay them out in rows like I did. You just have to make sure that the tomato wedges are in a single layer on the baking sheet and not on top of each other.

Then I sprinkled (really, I poured a couple times as you can see) olive oil onto the tomato wedges. Be careful if your “sprinkling” on olive oil straight out of the bottle like me. You don’t want to get too heavy handed with the olive oil and have soggy, oily tomatoes in the end.

Of course, I salted and peppered these little beauties (my mouth is watering just looking at the picture and writing this post). I didn’t want to throw any other spice on them because of the hamburger I would be making. I’m glad I didn’t because just roasting tomatoes brings out such a wonderful flavor in them.

All that was left to do, was to put these in the oven for about an hour at 350 degrees. You can cook tomatoes for a longer time at a lower temperature or for shorter time at a higher temperature. It’s hard to go wrong roasting tomatoes. Lookie how they turned out!

There are so many things you can do with Oven Roasted Tomatoes. You could put them on a sandwich, in a salad, make salsa out of them, put them in a pasta dish, on a hamburger, eat them off the pan (like me)…so many things and so easy to make!
