I need Chicken Noodle soup STAT!!

I have been sick for about 10 days. It’s been awful. I have done nothing but lie on the couch for days. I got so tired of lying on the couch. I know that seems like an odd statement but it’s true. I also had horrible cabin fever. When I’m sick for more than two days, I always want to get out of the house even if it’s only for a ride in the car while in my PJs. I asked my boyfriend drive me to Starbucks and get coffee. I know I looked awful and sickly but I just didn’t care. I had to step out of the house or else go crazy…. and 10 days is a long time to be sick. I sat quietly, except the coughing, in the passenger seat enjoying the fact that I was outside-ish.

During this awful time of being sick, if I ate anything, it was my go-to meal of chicken noodle soup…store bought chicken noodle soup because I was too sick to make my own. I had some odd dizziness every time I stood up which I attributed to the ear infection I had. I wasn’t able to stand for long in the kitchen and cook anything. That’s also the reason I haven’t posted for a while.

I finally started feeling more like my old self this weekend but I still wanted to eat Chicken Noodle soup. I was so tired of eating the store bought kind. The store bought chicken noodle soup is okay but I get tired of it very quickly. There’s not enough flavor in the store bought version for me. Now that I was at about 80% back to normal and didn’t feel so dizzy when I stood, I thought it was time to make my own homemade Chicken Noodle soup.

I’ve made this soup many times. This time around, I made a couple big changes and it added so much flavor. I added some garlic and thyme. Who would’ve thunk that garlic and thyme would take my Chicken Noodle soup to the next level but they really did. I loved the way this came together. The flavors were fantastic. This is Not Your Average Chicken Noodle Soup.

First I minced some garlic and finely chopped up some onion and celery. I am not usually a fan of celery but for some reason I like it in this soup.

I sauteed the garlic, onion and celery in butter for a few minutes. I add thyme, basil, oregano and freshly ground black pepper to the mixture and sauteed for a couple more minutes. Boy, was my kitchen smelling heavenly! I wish the picture below was a scratch-and-sniff picture so you could smell it too. So good! Maybe scratch-and-sniff food blogs should be a thing.

Next I added the carrots to the pan and sauteed the whole mixture for 2 more minutes. Then I poured the broth over the mixture in the pan and added the cut up rotisserie chicken breasts and egg noodles. I brought everything to a boil and then turned the heat down low and let the soup simmer for 20 minutes.

When I tried my first spoonful of this soup, I actually said “wow! that is yummy”. Then I proceeded to eat the rest of my bowl of soup with vigor that I hadn’t had in 10 days.

I still spent most of the time on the couch this weekend. I was getting rest, feeling cozy and eating my delicious Not Your Average Chicken Noodle Soup. I hope you like it as much as I did. Enjoy!

Not Your Average Chicken Noodle Soup

Ingredients

  • 2 tablespoons butter
  • ½ yellow onion chopped
  • 1 stalk celery chopped
  • 4 cloves garlic minced
  • ½ teaspoon dried thyme
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon ground black pepper
  • 2 carrots chopped
  • 8 cups chicken broth
  • 2 cups cooked chicken breast chopped
  • 2 cups egg noodles
  • Salt to taste

Instructions

  • In a large pot over medium heat, melt butter. Cook garlic, onion and celery in butter for 3 minutes. Add thyme, basil and oregano to the mixture. Cook for 2 more minutes stirring occasionaly. Pour in chicken broth and the remaining ingredients. Bring to a boil, then reduce heat and simmer 20 minutes before serving. Enjoy!
