This past Sunday, incredibly, I woke up at 5am. Why was I even up at that hour on a Sunday? Because I had been thinking for a couple weeks about what red, white and blue delicious dessert I was going to create for upcoming Fourth of July celebrations but I was torn. So torn, my racing thoughts woke me up. There I was trying to decide between so many yummy desserts….there’s the standard white sheet cake with a blueberry, strawberry flag on top. Believe me, I thought about creating my own version of that one because, honestly, I love it! There’s blueberry cobblers, strawberry shortcake, assorted pies…Oh my! After lots of contemplating and fretting, I decided I wanted to make something light and easy. Something that can be thrown together, quickly if necessary. I made a strawberry, blueberry, Angel Food cake trifle. HA!! I’m calling it: Easiest Fourth of July Berry Trifle. Fitting, don’t you think?  ?

In Seattle lately, there has been some days hotter than this Seattlelite can handle. Sunday’s high was a stifling 96 degrees! I know, it’s Seattle, what? In an effort to keep my house a little cooler that day (I don’t have air conditioning), I did not want use my oven. I needed a Angel Food cake so I bought one from my local grocery store. For this recipe, you can make your own Angel Food cake but for ease, saving time and keeping my house cool during a day of unbelievable heat, I used, dare I say it, a store-bought cake…. ?

The Easiest Fourth of July Berry Trifle is so simple yet so very tasty. I had some friends over to partake in my creation and they loved it! I was practically blushing at how much praise I received. I must say, I felt so good about making this dessert. The most time-consuming part of making the Easiest Fourth of July Berry Trifle was cutting out stars from the Angel Food cake to create a festive design. It was so worth it though! Just look at the end result.

A trifle bowl filled with white Angel food cake stars, sliced strawberries, blueberries and vanilla whipped topping. There is a small American flag on top and small decorative 4th of July hats and stars surrounding the bowl.

Easiest Fourth of July Berry Trifle

Ingredients

  • 1 Angel Food Cake
  • 4 cups of sliced Strawberries
  • 2 cups of blueberries

Vanilla Whipping Cream

  • 2 cups chilled whipping cream
  • 1 1/2 teaspoon vanilla extract
  • ½ cup sugar

Instructions

  • Cut up the Angel Food cake into 1 inch x 1 inch pieces. Layer the bottom of a trifle dish with until covered. Next, add a layer of whipped cream. Then alternate your strawberry slices and blueberries however you want. Repeat the process of adding a layer of cake a layer of whipped cream and a layer of berries. Top off with a layer of whipped cream. Ta-Da!

Notes

The measurements for the Angel Food Cake and berries don’t have to be exact. I used an Angel Food cake loaf, which worked out to be enough cake for the trifle. How many berries you need may depend on how full of berries you want your trifle. For the whipped cream part, I did use the exact measurements.
You can use a cookie cutter to make interesting shapes out of the Angel Food cake.
