I love a gooood salad. If I haven’t had salad for a while, I know this may sound odd, but I crave it! Crave it! And this happens more often than not. Some years ago, I was going to a BBQ and my friend mentioned that someone was bringing a Caprese salad. I LOVE Caprese salad. It’s typically tomatoes, buffalo mozzarella, basil and either balsamic vinegar or another tasty sauce drizzled over the top. I have eaten many Caprese salads on trips to Europe! Particularly while I’m in Italy. I was so looking forward to a nice Caprese salad at the BBQ. When the person showed up with the Caprese salad, it was the Caprese salad ingredients that I’m familiar with but with Spinach and microgreens added. Microgreens! What the heck? I had never even heard of microgreens! At first, I was so disappointed looking at the salad. I was expecting a plate of tomatoes, mozzarella and basil but WOW what a tasty salad it turned out to be. I felt so healthy eating it too as I washed it down with my glass of wine. This salad was GENIUS in my eyes.

Since the BBQ, where I was introduced to the delectable Caprese Salad with greens (normal-sized and micro…hee hee), I’ve been making it myself. I’ve found that Trader Joe’s sells microgreens. They’re tasty in salads.

It’s been a bit hot here in Seattle area the last couple days, and nothing much sounds good to eat except salad. I was going to make myself a nice Caprese salad but wanted a little more oomph than normal. What could I add to the Caprese salad with greens that would compliment the other ingredients? …uuhhh…Salami, of course!! That’s right, Italian Dry Salami! My oh my, the salad turned out to be delicious! So here I am, sharing it with you. This is my super simple, super delicious Caprese Salad with Salami and Greens! Bam!

I used ciliegine buffalo mozzarella. These are the small balls in water that you can find in the cheese or deli section of a grocery store usually. If not, you can use another size of buffalo mozzarella just make sure to cut up the mozzarella into bite-sized pieces. I also used Balsamic Glaze. This is thicker than Balsamic Vinegar and taste great. I’ve been able to find this in the aisle where vinegars are sold or the Italian section in grocery stores. Also, I used grape tomatoes for their flavor. They are a little sweeter than regular tomatoes and are very tasty in salads.

The flavors of this salad meld so well together. One suggestion for serving this dish is to not put the Balsamic Glaze on but let your guests put it on. That way the spinach and microgreens (if used) don’t get too saturated and mushy. If you make it, please let me know! I’d love to hear about what you’ve made!

Caprese Salad with Salami and Greens

Ingredients

  • 1 12- ounce package baby spinach
  • 2 cups loosely packed basil leaves , chiffonade
  • 2 cups of micro greens (if available)
  • 3 cups halved ciliegine , buffalo mozzarella
  • 8 ounce package Italian Dry Salami
  • 2 cups halved grape tomatoes
  • ½ cup Balsamic Glaze

Instructions

  • This salad is so easy to make that you just toss all the ingredients together and enjoy! ?
