I was introduced to Caprese kabobs by a friend who runs a wine club for the neighborhood where I live (everyone should have a wine club for their neighborhood ?). My friend always brings Caprese kabobs to the club events and parties. These are brilliant and so tasty that I eat way more than I should. I love the freshness of Caprese kabobs and the elegant, colorful way they look.
The first time I made these I bought some long wood skewers from my local grocery store. The skewers were so long they looked ridiculous so I tried to cut them down with the Caprese ingredients already on the end of them, which obviously made things difficult. It was bad planning on my part. They still looked ridiculous because the skewers were too thick and meant for something bigger, like a hunk of meat. I went with it anyway because that’s all I had available to me. I did find some really great smallish skewers at my local party store so the next time I made them, the presentation was much better.
I’ve usually have these kabobs with tomatoes, small mozzarella balls (ciliegine) and basil. I wanted to kick my kabobs up a notch so I drizzled pesto on them and am calling them Caprese Kabobs with Pesto. A simple name for an simple appetizer. These kabobs are super easy to assemble. There’s only 4 ingredients unless you make your own pesto. I use grape tomatoes, small mozzarella balls, basil and store-bought pesto. It makes for super easy, delicious appetizer. Just skewer a grape tomato, followed by a basil leaf, a small mozzarella ball, another basil leaf and then finally another grape tomato. If your basil leaves are big enough, you can skewer one end of the leaf, skewer the mozzarella ball and then skewer the other end of the leaf after wrapping it around the ball of mozzarella. After you have assembled all the kabobs you want, drizzle pesto over the top.
Take these Caprese Kabobs with Pesto to your next party! They’ll go quickly, especially if I’m there… ?
