When I go to the Paramount Theater in downtown Seattle, I’ll drop into one of the restaurants in the surrounding area for dinner before the show. At the beginning of April, I went to Mamma Mia and stopped by an “Asian bistro” type of restaurant for dinner before popping over to the theater. I was hesitant but decided to be adventurous and I ordered something I had never eaten before, Bacon Basil Fried Rice. It was so fantastic I felt like shouting “this is the bomb”!!! I restrained myself and went to see the show (by the way, Mamma Mia was really fun to see – check it out if you can!). I have not forgotten about that fried rice since that night so I thought it was about time I tried to replicate dish. I created Bacon-lishious Thai Basil Fried Rice…and so glad I did!! This dish is fairly easy to make and is so full of flavor. Who would’ve thought that peppered bacon and Thai basil would create a flavor bomb so amazing! You’ve got to give this dish a taste!

For this dish, it’s worth hunting down some Thai basil. It brings such a wonderful flavor to the dish. I found it my local grocery store (Safeway, in this case) in the vegetable section where they have fresh herbs. Thai basil is very different from Italian basil. It is a sweet basil that smells like anise and is spicier and bolder than Italian basil and is often used in Southeast Asian cooking. If you can’t find Thai Basil, use a mix of Italian basil and mint.

Bacon-lishious Thai Basil Fried Rice, as is, stands on its own so well. I didn’t add any extra veggies that you may normally see in fried rice like peas and diced carrots but you definitely could. Even adding a protein like chicken or shrimp to this dish would be fabulous.

Bacon-lishious Thai Basil Fried Rice

Ingredients

  • 6 slices peppered bacon , chopped into small bits
  • ½ medium sweet onion , diced
  • 3 cloves garlic , minced
  • 1 tablespoon canola/vegetable oil
  • 2 eggs , scrambled
  • 4 cups cold , cooked Jasmin rice
  • 1 cup bean sprouts
  • 1/3 tablespoons low-sodium soy sauce
  • 1/3 cup sweet chili sauce
  • 2 cups , chopped sweet Thai basil leaves

Instructions

  • Place bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until just beginning to brown, about 7 minutes depending on the thickness of your bacon.
  • Add onion to the skillet. Sauté until bacon is crisp and onion are softened, 3-5 minutes. Add garlic to the skillet and continuing stirring for 30 seconds.
  • Push all ingredients in the skillet to one side making an open spot in the skillet for cooking the eggs. Add the oil to the empty spot and heat for 30 seconds. Add eggs to the empty spot and scramble. When eggs are cooked through, stir in bacon mixture to combine.
  • Mix in the rice and bean sprouts. Add soy sauce and chili sauce. Stir all ingredients in the skillet until well mixed. Cook until the rice is heated through, 3-5 minutes.
  • Add the chopped Thai basil leaves to the skillet. Stir until all ingredients are combined. Serve and enjoy!! ?
